Banana muffins
Hi all
had my first foray into cooking with Roo yesterday which was a lot of fun. Thought I'd post the recipe as it was sooooo easy that you cooks out there will find it a breeze. (Rufus was incharge of mashing the banana and then smearing it all over the kitchen).
Basic Cake Mix:
3 oz butter (melted not hot),
1/2 cup milk
add to...
2 eggs, 1 cup self raising flour, 1 small cup sugar + vanilla essence (optional).
Beat together 4 minutes & bake for 30 mins (or thereabouts). I added 3 x mashed ripe bananas for the 'muffins' but it's a good chocolate cake, too if you add about 3-4 tablespoons of good quality cocoa.
